The Kitchy Kitchen: GRILLING FROM FOOD FOR THOUGHT WITH ...

I love the smell of smoke: fireplaces, barbecues, dragons, anything that produces smoke gets my immediate attention and an obvious comment. ?"Smells like winter," or "Smells like summer," or "Smells like slaying season." ?And as much as I love eating things cooked over an open flame, I do very little cooking over an open flame myself. ?It's such a dad thing that I leave it to him, which means my grilled food is limited to meat and vegetables. ?This isn't a bad thing, but little did I know everything could be grilled. ?Seriously, everything. ?

Every Sunday during the summer my family tries to get together for dinner and some form of entertainment. My sister and I are such an awesome Cranium team that it's simply too demoralizing for the rest of my family to play. Emotions run high in the Thomas household, and bruised egos, wine, and giant dodecahedron shaped dice are a less than sportsmanlike combination. So it's apples to apples now! My dad is the only person frustrated by a game based entirely on subjective inside jokes and obscure knowledge of another person's humor, so, too bad if the winning card isironic, dad, we're still playing. Note: best moment of the night was when he put down "Joan of Arc" for "eccentric", and lost to "Cher." In the midst of arguing his case he claimed to "know" Joan of Arc, which we all assumed meant personally, and teased him for the rest of the night for knowing a 15th century saint.

Jane's Shrimp on the Barbie

My mom's shrimp share their origins with my childhood birthday cakes, sausage rolls, and a few other Aussie treats, which all derive from the same tome: The Australian Women's Weekly. Stacks of paperback cookbooks from the early 80s protrude from her cupboards, filled with ugly photography and lots of mayonnaise. And yet, with a little tweaking they produce delicious and unexpected results. These shrimp are a little sweet, a little spicy, and have that "what is this flavor?" factor. They're perfect on their own or tossed in a salad. Enjoy!

3 lbs fresh medium shrimp, peeled and deveined?
1/3 cup vegetable oil
2 tablespoons of honey
2 tablespoons chili sauce (not hot sauce)
1 tablespoon lemon juice
3 large shallots, finely chopped
2 tablespoons of finely chopped parsley
2 tablespoons finely sliced green onions
1/4 teaspoon ground Chinese five spice

Combine all of the ingredients, adding the prawns last, and marinate in the fridge for one to two hours. Put the prawns onto wooden skewers, about 4 to a skewer. I submerge my skewers into water while the prawns are marinating so they don't burn on the grill. On a medium-high grill, cook the prawns until just firm, about 1 minute per side. Brush the prawns with the marinade as they cook. I usually serve about 2 skewers per person. Enjoy!


Grilled Corn with Honey, Lime, and Ancho Chili Butter

Grilled sweet corn is one of the staples of summer, and the slightly sweet and spicy butter only brings out its delicious and delicate flavor. Enjoy!


10 ears of white corn
2 tablespoons olive oil
Salt and Pepper
12 oz unsalted butter, softened
1/2 teaspoon ancho chili powder
2 1/2 teaspoons lime zest
2 teaspoons honey

Mix the butter, zest, ancho chili powder, and honey together. Salt to taste and put butter into butter dishes. I decorated mine with an extra pinch of ancho chili powder and lime zest. Set aside or refrigerate. Set your grill to high and drizzle olive oil evenly over the corn, rolling the ears to cover all sides. Sprinkle with salt and pepper, and cook until each side has a little color, about 2-3 minutes a side. Serve hot and butter with the back of a fork (it works better than a knife) and enjoy!

Barbecued Chicken with Homemade BBQ Sauce


BBQ Sauce:


2 cups ketchup

1/4 cup Worcestershire sauce

1/4 cup firmly packed brown sugar

2 tablespoons molasses

2 tablespoons whole grain mustard

1 tablespoon of Barbeque Rub (listed below)

1/2 teaspoon black pepper


Combine all of the ingredients in a saucepan and slowly bring to a boil over medium-high heat. Reduce the heat to medium-low and gently simmer until dark, thick, and richly flavored, for 10 to 15 minutes. Transfer the sauce to a clean jar and store in your refrigerator.



BBQ Rub:

(This makes a ton of rub)

1/4 cup salt

2 1/2 tablespoons black pepper

3 tablespoons paprika

1 teaspoon cayenne pepper

1/2 teaspoon ground cumin

1 teaspoon crushed fennel seed


For the chicken, I am starting with a rub. This is so simple, it?s just salt, pepper, paprika, cayenne, cumin and fennel seed, but the flavors pack a punch. Mix these up, and it?s ready to go.?



For the Chicken:


1 fryer chicken, broken down into 6 pieces (breast, wings, thighs + legs)

Vegetable Oil, for the grill


Give these a rub thoroughly with a tablespoon or two of the BBQ Rub and transfer to a plate. Take to grill.

I?m heating my grill to medium ? it?s okay to go slow with chicken, especially because as a meat, it?s more delicate than red meat and will dry out quicker. There?s no need to blast it, in fact, I think that?s how most people overcook meat on the grill.?


Brush the grill with oil and immediately add the chicken, skin side down. ?Grill breast halves, thighs, and drumsticks, skin side down, over direct heat for 10 minutes to get nice, deep sears. Flip, move to indirect heat, and grill, covered, until an instant-read thermometer inserted into the thickest part of thighs registers 165 degrees, 10 to 15 minutes.?


Grill wings over direct heat, flipping often, until cooked through, about 10 minutes. At the last second, brush the chicken with the BBQ sauce, flip, and brush the other side. ?Transfer chicken as cooked to bowl with BBQ Sauce and turn to coat. Cover with foil.?

Enjoy!

Grilled Vegetable Salad

1 large red onion (or 2 small), sliced 1/2 inch thick
1 zucchini, sliced 1/2 inch thick
1 red bell pepper, sliced in half
1/2 bunch asparagus
1 ear of corn
Olive Oil
Salt and Pepper
8 oz mesclun greens


Vinaigrette:

2 tablespoons white wine vinegar
6 tablespoons olive oil
1 tablespoon shallot
1 teaspoon finely chopped parsley
1 teaspoon dijon mustard
Salt and Pepper

Heat the grill on high. ?Coat all of the vegetables in olive oil and sprinkle with salt and pepper. ?Pop on the grill and cook until they get nice and marked (about 2 minutes per side) and flip. ?Then, take the vegetables off heat and chop them up into 1/2 inch pieces (slice the corn kernels off the cob). ?In a large bowl, mix together the vegetables and lettuce, ?and drizzle with 1 tablespoon of vinaigrette or serve on the side for people to dress themselves.


Grilled Peaches with Lemon Mascarpone and Toasted Almonds?

?I've seen grilled peaches rolling around magazines before, but I've always been kind of "meh" about them. ?I don't know, it just never really got me going. ?I'd just rather have a cobbler. ?But this summer, just like the smoke of flaming grills, change was in the air. ?I bit into a ripe yellow peach at the farmers market and in that moment I knew: "This could be grilled!" ?I went home and immediately cranked up the grill. ?I threw on the peaches and before I knew it, I had all kinds of ungrillables grilling away. ?The smoke imparts a savory earthiness to everything laid near it. ?Served with lemon mascarpone and toasted almonds, these peaches are the perfect balance of brightness, nuttiness, and bursting juiciness. ?They're the ultimate dessert for a balmy summer night. ?Enjoy!

4 ripe, delicious yellow peaches, halved and pitted.
3/4 cup dark brown sugar
1/2 cup salted butter
1/2 cup blanched almonds, pulverized in the food processor
8 oz mascarpone cheese
4 oz creme fraiche
2 ounces heavy cream
2 tablespoons lemon juice
2 tablespoons lemon zest, plus more for garnish
1 teaspoon honey, if necessary

Heat your grill up to high. Blend the sugar and butter together to form a paste and smear it on over the faces of the peaches. ?You will probably have some left over that you can eat with a spoon. ?

?I whipped together the mascarpone, creme fraiche, lemon zest, and lemon juice until combined. ?Add the heavy cream and whip a few times to incorporate. ?Taste, and if you would like, add the honey. ?

Now, Grill the peaches. ?I would do no more than three at a time, because they cook quickly, about 30 seconds or less. ?You simply want dark grill marks. ?Set the cooked peaches aside face up. ?Eat hot off the grill with the mascarpone mixture on the side, plus a sprinkling of almonds and lemon zest. ?You can also enjoy these peaches cold, or with ice cream.

I log in and out a fair bit, and so my Account Picture shows up on the logon screen.

And i thought wouldnt it be nice if that automatically synced with my Facebook so the photo is always up to date..

Would anyone think this would be a cool idea?

Btw.. i was first at macrumors to suggest iMessages on Mac, so i'm on a bit of a streak

Felix Baumgartner?s space jump captivates Internet, Twitter

Felix Baumgartner's record-setting jump from the edge of space captivated millions watching the Red Bull-sponsored event live online via YouTube. And the 43-year-old Austrian skydiver's two-hour, 24-plus-mile balloon ascent and harrowing four-minute freefall provided plenty of fodder for those on Twitter.

"And you thought your weekend was exciting," Twitter user @wonderwamy wrote.

"I seem to have tuned into the part of #spacejump where ground control is explaining to Baumgartner how to build an IKEA bookshelf," Dave Itzkoff wrote on Twitter.

"Instagram it or it didn't happen," Kathleen Schmidt tweeted.

"Best landing since McKayla Maroney," Dave Bry wrote, a nod to the gold-medal-winning American gymnast.

At its peak, more than 8 million users watched Baumgartner's freefall, according to YouTube.

"Not confirmed yet, but I'm hearing this was the most live-tweeted space jump in history," Joseph Weisenthal joked.

Health and Fitness is when you are?able to eat well, to be able to do sports for a long period of time (to be able to keep on going), and to sleep enough. To be healthy, you need to balance these out; eat, sleep & move (sports). Being fit means, you can do sports without stopping much or to be able to do it for a long period of time.

Components that can make you ?fit are:

Balance between different parts of your body

? Muscular strength

Amount of force your muscle can?exert

? Muscular?endurance

to be able to use your muscles for a long period of time

? Cardio vascular endurance

exercise for a long period of time

Components of skill related fitness are:?

Agility: The ability to rapidly and accurately change the direction of the whole body in space.

Balance: To be able maintain balance while stationary or moving.

Coordination: To use the senses and body parts in order to perform motor tasks smoothly and accurately.

Power: The amount of force a muscle can exert.

Reaction Time: The ability to respond quickly to move.

Speed: The amount of time it takes your body to perform a specific tasks.

What is the difference?

The difference between the?components of Fitness and the components of skill related fitness are that?components of Fitness is how you can use these components to check how fit you are. The components of skill related fitness are the skills you need to be fit.?Components of Fitness are different ways to be fit and components of skill related fitness is what you need to achieve those fitness components.

How do athletes analyse their fitness levels?

You can check which level your at by using graphs like these:

Level 4/5 My CV endurance could be better. I can run for a small distance without getting tired but then want to stop. Maybe my motivation drops or my heart hurts and I get out of breath.

The advantage of doing these fitness tests are, you can see how fit you are and find ways to improve it. However, the disadvantages of fitness tests are, you might not be fit enough and hurt yourself. This is why you need to be careful when you do any fitness tests.

My fitness level is probably average because even though i was able to keep on going, i could not do it for a long period of time. Cardio Vascular Endurance are important to me because, you need this for most of the sports, such as cross country, basketball, volleyball, etc.

Goals

1) I want to improve my cross country time by at least 1~2 minutes during the 3 months. I will ? be able to see the improvement by the time difference (lap time).

2) Be able to keep in doing the fitness training without stopping. (30sec each)

3) Do more laps in the 12mis lap. I will see the progress when theres more increase in my amounts of laps.

Do black people support Obama because he's black?

Surviving slavery, segregation and discrimination has forged a special pride in African-Americans. Now some are saying this hard-earned pride has become prejudice in the form of blind loyalty to President Barack Obama.

Are black people supporting Obama mainly because he's black? If race is just one factor in blacks' support of Obama, does that make them racist? Can blacks' support for Obama be compared with white voters who may favor his Republican challenger, Mitt Romney, because he's white?

These questions have long animated conservatives who are frustrated by claims that white people who oppose Obama's policies are racist. This week, when a black actress who tweeted an endorsement of Romney was subjected to a stream of abuse from other African-Americans, the politics of racial accusation came full circle once again.

Stacey Dash, who also has Mexican heritage, is best known for the 1995 film "Clueless" and the recent cable-TV drama "Single Ladies." On Twitter, she was called "jigaboo," ''traitor," ''house nigger" and worse after posting, "Vote for Romney. The only choice for your future."

The theme of the insults: A black woman would have to be stupid, subservient or both to choose a white Republican over the first black president.

Russell Simmons, the hip-hop mogul and Obama backer, called Dash's experience "racism." Said Barbara Walters on "The View": "If she were white, this wouldn't have happened."

Twitter users are by no means representative of America, and many black Obama supporters quickly denounced the attacks. But for people like Art Gary, an information technology professional, the reason Dash was attacked is simple: She is a black woman supporting a white candidate over a black one.

"It goes both ways," said Gary, who is white. "There is racial bias amongst whites, and there is racial bias amongst blacks. But as far as the press is concerned, it only goes one way."

Antonio Luckett, a sales representative in Milwaukee who is black, called the attacks on Dash unfair. But when people speak out against a symbol of black progress like Obama, he said, "African-Americans tend to be internally hurt by that."

"We still have a civil rights (era) mentality, but we're not living in a civil rights-based world anymore," he said. "We want to say, 'You're black, you need to stand behind black people.'"

Luckett said one reason he voted for Obama in the 2008 primary against Hillary Clinton was because Obama is black: "Yes, I will admit that."

Is that racism? Not in Luckett's mind. "It's voting for someone who would understand your side of the coin a lot better."

Such logic runs into trouble when applied to a white person voting for Romney because he understands whiteness better. Ron Christie, a black conservative who worked for former President George W. Bush, finds both sides of that coin unacceptable.

"It's not the vision that our leaders in the civil rights movement would have envisioned and be proud of in the era of the first African-American president," Christie said.

Martin Luther King Jr. fought Jim Crow laws, which deprived blacks of political rights after Reconstruction, upheld by Southern Democrats. But black voters switched after Democratic President Lyndon B. Johnson pushed through the 1960s civil rights legislation and Republicans successfully pursued the votes of white people who disliked the civil rights agenda.

Since then, Democrats have persistently wooed black voters with programs and platforms that African-Americans favor, and the party has been rewarded every four years.

Clinton got 83 percent of the black vote in 1992 and 84 percent in 1996; the third-party candidate Ross Perot probably sliced away some of Clinton's black support. Al Gore got 90 percent in 2000; John Kerry got 88 percent in 2004. Obama captured 95 percent in 2008, and 2 million more black people voted than in the previous election.

Christie says he, too, shares the sense of pride in Obama smashing what for blacks is the ultimate glass ceiling. He understands that black pride springs from a shared history of being treated as less than human, while the history of pride in whiteness has a racist context.

But he still sees black people voting for Obama out of a "straitjacket solidarity."

Christie sees it in his barbershop, where black men shifted from calling candidate Obama "half-white" and "not one of us" to demanding that Christie stop opposing the first black president.

He sees it in the comments of radio host Tom Joyner, who told his millions of listeners a year ago, "Let's not even deal with facts right now. Let's deal with our blackness and pride ? and loyalty. . I'm not afraid or ashamed to say that as black people, we should do it because he's a black man."

The actor Samuel L. Jackson said much the same thing: "I voted for Barack because he was black," he told Ebony magazine. "Cuz that's why other folks vote for other people ? because they look like them."

In 2011, as black unemployment continued to rise, the chairman of the Congressional Black Caucus said that if Clinton was still president, "we probably would be still marching on the White House . (but) nobody wants to do anything that would empower the people who hate the president."

And just last week, the rapper Snoop Dogg posted a list of his voting reasons online. No. 1 on his pro-Obama list: He's black. Snoop's top reason to not vote for Romney: He's white.

All of this may help explain why Veronica Scott-Miller, a junior at historically black Hampton University, directed the following tweet at Dash: "You get a lil money and you forget that you're black and a woman. Two things Romney hates."

In an interview, Scott-Miller said the GOP fought Obama's effort to provide funding for historically black colleges like hers. She dislikes Romney's opposition to abortion and thinks Republicans have a "negative stigma about us . they make generalizations in their speeches about our race in general, and they make up terms like welfare queens and stuff."

Told that some saw her tweet as racist, she said that's not what she meant. "I was saying that as a black woman, Romney doesn't have that much that would make us want to vote for him," said Scott-Miller, who is black. "Because Barack Obama lives with three black women in his house, he knows about what they need, he knows about the issues we may be facing, he talks to black women on the regular."

Sherrilyn Ifill, a law professor at the University of Maryland, wrote a column last week exploring why so many black voters are rejecting Romney. She said it has less to do with the candidate than with his party's treatment of Obama, such as John Sununu calling the president "lazy" after the debate, a congressman shouting "You lie!" during the State of the Union address, claims that Obama is not a citizen and more.

In an interview, Ifill said that for black voters, such accusations feel like white people are attacking their own dignity. "In essence," she says, "they are closing ranks around Obama."

Comparing black pride in Obama to white pride in Romney is a "false symmetry" because of the history of black oppression, she says, and she asked for patience from America at large.

"There should not be this resistance to pride over the first black president," Ifill says. "If we get to the fifth one, I'll be with you."

Condom use drops when young women use hormonal contraceptives

ScienceDaily (Oct. 12, 2012) ? Young women who start using hormonal contraceptives for birth control often stop using condoms, but a new study in the Journal of Adolescent Health finds that if they later discontinue using hormonal contraceptives, they tend not to resume using condoms. This leaves them open to both unintended pregnancy and sexually transmitted infections (STIs).

The prospective year-long study included 1,194 sexually active women aged 15 to 24 visiting Planned Parenthood clinics and who were starting on contraceptive pills, patches, injections, or vaginal rings and not planning a pregnancy within the year. The researchers collected data on the young women's beliefs toward condom use and their knowledge of their partners' beliefs toward condoms.

At the beginning of the study, 36 percent of the young women used condoms consistently. Condom use dropped to 27 percent by 3 months later. Over the year, some women discontinued using hormonal contraception. More than half did not resume using condoms after they stopped using other contraception, according to Rachel Goldstein, M.D., of Stanford University School of Medicine and lead author of the study.

Using condoms together with other contraception (dual method use) decreases both the risk of pregnancy and sexually transmitted infections. The single largest predictor of using condoms and other contraception is the attitude of the woman's partner toward condoms, Goldstein noted. Women who said their partner thought condoms were "very important" or did not know how their partners felt about condom use were more likely to be dual method users than women who said their partner thought condoms were "not at all important."

"It appears that her partner's feelings may be more important than her perceived risk of a sexually transmitted infection or her own beliefs about dual method use," said Goldstein. This finding underscores the fact that a woman's decisions about contraception and preventing STIs may depend on factors over which she has little control. "Although a woman feels like she is at risk for an STI, she may not be able to advocate for herself and successfully negotiate condom use with her partner," Goldstein explained. Because a lapse in hormonal contraceptives may lead to unintended pregnancy, it may be better practice to advise young women to use longer-acting reversible contraceptives, such as implants or IUDs, and about the importance of condoms in preventing STIs, she recommended.

The study did not look at the use of hormonal implants or IUDs, also noted Mark Nichols, M.D., professor of obstetrics and gynecology at Oregon Health and Science University in Portland. IUDS, which protect against pregnancy for several years, are an increasingly popular and highly recommended choice for women who are starting contraception now. Furthermore, although the study concluded that more counseling was needed, it did not describe the kind of counseling the women received either when they started hormonal contraception or at later clinic visits, he added.

Senegal: Graves desecrated in Christian cemeteries

DAKAR, Senegal (AP) ? Roman Catholic church officials say nearly 160 graves have been desecrated in the two largest Christian cemeteries in Senegal's capital.

The Rev. Roger Gomis, head of communications for the archdiocese of Dakar, said Thursday that crucifixes had been torn off of gravestones in Christian cemeteries.

The church said the vandalism had taken place over the last several months.

Vandals took crucifixes, statuettes and other pieces made of bronze without touching those made of iron or aluminum.

Sebastien Diatta, whose mother's grave was among those desecrated, said Thursday that the government must launch an investigation and stop the vandals.

Senegal is a predominantly Muslim country in western Africa where Muslims and Christians coexist peacefully.

No long US airline delays at close of summer

Updated at 12:48 p.m. ET:?U.S. airlines closed the summer travel season without any lengthy tarmac delays in August, the government said Thursday, a sharp reversal from a month earlier.

There were more long delays in July on airport tarmacs than in the previous eight months combined.

In August one international flight was stuck for more than four hours. On Aug. 15, a Caribbean Airlines flight sat on the tarmac at New York's JFK Airport for four hours and 28 minutes before it took off for its destination, Trinidad and Tobago.

U.S. airlines are subject to huge fines if they keep passengers on a grounded plane for more than three hours. Violations start at four hours for international carriers at U.S. airports.

Almost four in five flights were considered on-time in August, meaning they arrived within 15 minutes of their posted schedule. At a rate of 79.2 percent, U.S. airlines were just slightly less on-time than a year earlier but better than July's 76 percent on-time rate.

Hawaiian and Alaska Airlines held their traditional top spots in the rankings. Delta was the most efficient major network airline, with an on-time rate of 83.9 percent. United was the worst.

Cancellations fell from both the month and year before. Fewer travelers complained about lost or damaged bags in August as well.

At the end of August, there were 56 flights that were chronically delayed ? 30 minutes late more than half the time ? for two straight months. Flights were mostly operated by regional carriers doing business for bigger airlines. Many of them were departing from congested airports like Newark Liberty in the New York area or San Francisco International. No flights were chronically delayed for three consecutive months or more.

Get Fit with New Classes at Solheim Center | The YellowJacket

Whether you are trying to lose a few pounds or tone muscle to impress the endangered species of LETU females around campus, there is a program for everyone starting this October at the Solheim Center. I was given the opportunity to discuss these new programs with Suzanne Merritt (tennis coach/Health and Wellness Director) and Katie Zappasodi (CPT/Fitness Instructor) find out? little more about what is going to be offered for students and staff next month at LeTourneau University.

The classes include water aerobics, Dance Fitness, Body Pump, and Cardio Fitness, all of which are professionally developed fitness programs that have been proven to show results. In the words of Mrs. Zappasodi, "there is something for everyone." All of these classes are free for students to attend, which makes them slightly more appealing when you?re already on a Ramen and Cheap Coffee budget like so many of us college students.

Along with these new programs are a few things that you may not have heard about via the Communicator. The Solheim Center is offering a once a month free luncheon available to all students that includes classes on Health and Wellness as well as an Individual Health Awareness class; this month's?topic is cancer awareness. These luncheons will include expert speakers, classes on ?Healthy Holidays? and professional chefs doing cooking demonstrations (which once again means free food).

I was able to take some time out of my schedule to actually attend the water aerobics class on Monday and get the "insider opinion," as they say in the writing world. We did all sorts of exercises that included everything from stretches to weighted exercises and swim cardio (safety floaties included, of course). It was an all-around good time and definitely a great way to have an exciting and effective workout without the uneasiness spurred by the presence of the "meatheads" normally lurking around the gym. (No offense to you hard chargers out there).

Considering the emphasis on community we have here at LeTourneau, hopefully students will be able to take this opportunity to interact with others and have some fun at the same time. In the future classes are rumored to include Yoga and Pilates as well as many other student-friendly classes. These classes are designed to divert your mind from stress and to help you sleep at night, which in turn will give you more energy during the daytime. According to a statistic provided by Howard University, obesity rates in young adults have doubled since 1980; this means that you may find a few unexpected pounds attempting to creep up on you this holiday season. The health risks that come with that are not all enticing, either, such as high blood pressure and diabetes, which only lead to more stress for the average college student. So do yourself a favor this semester and get up, get active, have fun, and try to take it easy on the candy corn.
